New Summer Recipe!
Easy Golden Coconut Rice + Shrimp
Ingredients:
- 1 cup water 
- 1.5 cups jasmine rice 
- 1 can (13.5 oz) Cocount Creme Milk 
- 1/4 tsp Turmeric 
- Fresh Ginger (peeled, thumb size piece, chopped) 
- Garlic Cloves (1-2) 
- 1 Fresh Mango 
- 1 Tblsp Butter 
- Seasonings to taste: garlic powder, paprika, chili powder, salt, pepper 
- 2 cups shrimp (peeled, cooked, de-viened) 
- Coconut aminos (1/4 - 1/2 tsp) 
Time to prepare: 10 mins with chopping
- Coconut Rice: Add rice, water, coconut creme milk, and Turmeric in a pot. Place a lid on the pot, turn the heat up to high, and allow the liquid to come up to a full boil. Once it reaches a full boil, turn the heat down to low. Allow the rice to simmer over low for 15 minutes. Make sure the pot maintains a simmer. Do not stir or lift the lid as the rice simmers. 
- After simmering for 15 minutes, remove the pot from the heat and let the rice rest an additional 5 minutes without lifting the lid. Finally, after the rice has rested, you lift the lid and fluff with a fork. Serve hot 
- Shrimp: place butter, chopped garlic cloves, and fresh ginger in the bottom of a pan on medium heat. Let butter melt with garlic and ginger softening. 
- Add shrimp into the pan, coating in the butter/spice mix. Add seasonings and coconut aminos. Cook for approximately 5 mins or until shrimp is warmed. 
Final touch: Place the Shrimp on top of the coconut rice. Top with cut fresh mango pieces.
Note: You can add any type of protein to this dish instead of shrimp! Scallops, Tuna, Chicken, Steak, etc.
